Reduced Sodium Turkey and Bean Burritos

Burritos were a weekly part of my diet it seemed like. Now that I'm on a low sodium diet, I had to find a way to incorporate these back into my life, although maybe not weekly.


The first step was finding a low sodium flour tortilla. I found the answer with La Banderita low sodium tortillas. 85mg per tortilla sounds good to me.


Next up, I had to give up my usual beef, per dr.'s orders. So I used ground turkey. You can substitute ground beef. Just adjust sodium accordingly.


I love to make these in advance and freeze them. Can't beat a microwave burrito.


Makes 8 burritos, 172 mg per burrito.



Ingredients

  • 2 cups sodium free chicken broth

  • 1 cup long-grain white rice

  • 4 garlic cloves, minced

  • 1 tablespoon dried cilantro

  • 2 bay leaves

  • 1 (15-ounce) can no salt added pinto beans, rinsed, divided

  • 1/2 cup water

  • 1 tablespoon vegetable oil

  • 1 yellow onion, chopped fine

  • ¼ cup no salt added tomato paste

  • 1 tablespoon ground cumin

  • 1 teaspoon dried oregano

  • 1 teaspoon chili powder

  • 1 pound 85% ground turkey

  • 2 tablespoons lime juice, divided

  • 1 tablespoon lemon juice

  • 8 (10-inch) low sodium flour tortillas

  • 2 ounces shredded Swiss cheese

Directions

  1. Bring 2 cups broth, rice, bay leaves to boil in small saucepan over medium-high heat. Reduce heat to low, cover, and cook until rice is tender and all liquid has been absorbed, about 20 minutes. Remove from heat. Add cilantro, 1 tablespoon lime juice, lemon juice and remove bay leaves. Fluff rice with fork, and set aside.

  2. In a medium bowl, take 1/2 the beans and water and mash until almost smooth. Set aside.

  3. Heat oil in large skillet over medium-high heat. Add onion. Cook until softened.

  4. Add tomato paste, chili powder, cumin, oregano and garlic. Cook until that cumin and garlic smells like heaven, which is usually a minute or so.

  5. Add ground turkey. Cook until browned, breaking up the meat as it cooks.

  6. Stir in the mashed beans and remaining lime juice. Stir until combined. Mix in remaining beans. Remove from heat.

  7. Warm up the tortillas in the microwave, usually 30 seconds is good enough.

  8. Setup your ingredients into a burrito station.

  9. Start with a layer of cheese, add a layer of rice, followed by the meat and bean mixture.

  10. Serve. The remaining burritos can be frozen. Microwave frozen burrito about 4-5 minutes, until warm inside.
