One of the things that I miss from my pre loso days in convenience foods. Now anything that comes inside a bag in a box is a no. But making quick dinner is still a tasty option. So here's my one skillet lasagna. Please feel free to substitute whatever noodle you have on hand. I had bow ties for this particular day, but mafalda, broken lasagna noodles, spirals, whatever is in the pantry will do.

Ingredients
1lbs 85% ground turkey
1 medium yellow onion, diced
3 garlic cloves, minced
14.5 oz can diced no salt added tomatoes
15 oz no salt added tomato sauce
6 oz mafalda pasta (or pasta of your choosing)
1/2 tsp fennel
1/4 tsp red pepper flakes
2 tsp oregano
3 tablespoons fresh basil or 3 tsp dried
1/4 cup ricotta cheese
Olive oil
Instructions
Heat olive oil in large skillet, medium high.
Once oil is nice and shimmery, add onion and cook until softened.
Add garlic and red pepper flakes and cook until fragrant, about 1 minute.
Add ground turkey. Break up meat as it browns.
Once no pink remains, add pasta, diced tomatoes, sauce, fennel, oregano, basil (only if using dried). DO NOT STIR
Top with enough water to cover pasta. Bring to a simmer, cover and reduce heat to keep at a simmer. Stirring occasionally.
Cook until pasta is tender, about 15 minutes or so.
Remove skillet from heat. Drop in spoonfuls of ricotta and top with basil if using fresh.
Serve!
