Peanut Butter Blossom Cookie Oatmeal

Having gotten through the holidays, I find myself out of cookies. My holiday favorite is, of course the peanut butter blossom cookies. Now, I'm not calling this healthy, but it's not the worst breakfast. The peanut butter and butter add some protein. I use the JIF naturals at 40mg for 1 tablespoon. This recipe is quick to whip up and reminds me of my childhood treat. It's a great low sodium way to start the day.


Serves 1, 40mg sodium





Ingredients

  • 1/2 cup old fashioned oats

  • 3/4 cup water

  • 1 tsp brown sugar

  • 1/4 tsp vanilla

  • 1/2 tablespoon unsalted butter

  • Milk chocolate chips

Directions

  1. Add oats and water to bowl, microwave for about 90 seconds.

  2. Stir in butter, peanut butter and vanilla.

  3. Sprinkle chocolate chips over the top.


That's it. Nothing fancy. My morning routine tends to be very simple. I'm not a morning person and I tend to wake up about 20 minutes before I have to leave for work. So a breakfast like this is usually all I have time for.
