Looking for a quick dinner? This LoSo alfredo sauce is perfect on pasta, chicken or pizza! And it's vegan! Its only about 50mg of sodium per serving (serves 4).
Ingredients
1 tablespoon oil
1 head of cauliflower, rough cut into florets. Nothing fancy, its getting blended
1 cup raw cashews
2 cups sodium free broth
4 garlic cloves, minced
1/2 tsp onion powder
1/8 tsp nutmeg
1/4 tsp black pepper
1/4 cup nutritional yeast
In a Dutch oven or large sauce pan, heat oil to shimmering. Add cauliflower and cashews and cook until brown. Add garlic and cook until fragrant.
Add broth, spices and bring to a simmer. Cover and cook until cauliflower is fork tender, about 5-10 minutes. Turn off heat and add contents to blender. Blend until smooth. Add nutritional yeast and stir until dissolved. Serve over pasta, on veggies, as a pizza sauce. Whatever your creative mind finds!
