Low Sodium Taco Rice

This is sure to be a family hit! Serve it with tortilla chips, as a burrito filling or part of a taco salad.


This has 4 servings with about 100mg per serving



Ingredients

  • 1 tablespoon neutral oil

  • 1lb ground beef

  • 1 diced onion

  • 4 cloves garlic, minced

  • 2 tsp sodium free chili powder

  • 1 tsp cumin

  • 1 tsp dried cilantro

  • 1 tsp coriander

  • 1/2 tsp dried oregano

  • 1 10oz can of No Salt Added Ro-Tel

  • 1 8oz can of no salt added tomato sauce

  • 2 tsp sodium free beef bouillon

  • 1 1/2 cups water

  • 1 cup long grain rice


Directions

  1. In a large skillet or Dutch oven, heat oil over medium heat until it shimmers. Add onion and cook until just soft, about 5 minutes. Add in garlic, chili powder, cumin, cilantro, coriander and oregano and stir until fragrant, about one minute.

  2. Add in beef and break up as it cooks. You'll want to cook until all the pink is gone. Stir in rice and stir constantly until the rice begins to brown.

  3. Add in beef bouillon, water, Ro-Tel and tomato sauce. Stir until everything is well incorporated.

  4. Cover and let cook about 15-20 minutes, stirring once half way through.


Top with whatever toppings you like. Some fun ones include green onion, sour cream, guacamole, pico de gallo, lime juice or cheese. Just remember to add that sodium into the final number.
