Cheese sauce. That phenomenal, unnaturally orange cheesy goodness is an absolute no in my diet. But I love cheese. So what's a LoSo gal to do? Make her own, of course!
This "cheese" has an almost permanent place in my refrigerator. I use it all the time. For mac and cheese, veggies, pretzels, sandwiches, burritos, chips and so much more. And this low sodium cheese sauce is also vegan!
Weighing in at about 35mg for the entire batch. Dig in!
Ingredients
1 cup raw cashews - soaked in water for 8 hours
1/2 cup water
1/4 cup nutritional yeast
1/4 cup nsa rotel
1/2 tsp onion flakes
1/2 tsp garlic powder
1/4 tsp chili powder
1/4 tsp turmeric
Pepper
Add ingredients to blender and blend away. That's all you need to make this tasty low sodium sauce. The nutritional yeast gives it that cheesy flavor. The turmeric adds a nutty, earthy flavor while also giving it that bright orange characteristic that cheese sauce is famous for. We eat with our eyes first. You can play around with it too. Take out the rotel, sub in regular tomatoes so it has less kick. Or change up the spices.
