Low Sodium Braised Potatoes

This is an easy side dish that is mostly hands off, allowing you to attend to other parts of your meal. 117 calories, 25mg sodium. Serves 6.



  • 1½ pounds small red potatoes, cut in half

  • 2 cups water

  • 3 tablespoons unsalted butter

  • 3 garlic cloves, minced

  • 1/2 teaspoon thyme

  • 2 teaspoons lemon juice

  • 1/2 teaspoon pepper

  • 2 tablespoons chives


In a skillet, arrange potatoes, cut side down. Add water, butter, garlic, pepper and thyme. Bring to a simmer and cook covered for 15 minutes. Remove lid and continue to simmer, occasionally swirling pan, until liquid is reduced and butter starts sizzling. Remove from heat and add in lemon juice and chives. Stir to combine.
