Muffins. So versatile. So tasty. Don't tell my mom, but I stole her basic muffin recipe when she wasn't looking.
Feel free to play with variations on this until your heart's content. Add chocolate chips, or blueberries and lemon zest. Swap out some oil for some mashed bananas and add walnuts. Swap the oil for applesauce and cinnamon.
These make about 12 regular sized muffins or 6 large muffins. As written, this entire batch is 140 mg, so depending on muffin size its 12mg-18mg.
Ingredients
2 cups flour
3/4 cup sugar
1 tablespoon sodium free baking powder
2 Eggs
3/4 cup vegetable oil
3/4 cup water
Directions
Preheat oven to 350F. Spray muffin tins with cooking spray or line with liners.
Whisk the dry ingredients in a medium bowl. Add in the wet ingredients and stir until combined.
Fill muffin tins. Bake for about 20-25 minutes, until toothpick comes out clean from the center of a muffin.
